Yesterday for Christmas Eve-Eve we had planned for few close friends to come over and have our “Friendsmas”. I decided I would make the ham and turkey that one of our banks gifted us for the holiday at work. Since I was going to have SO much food, I told my hubby to invite over a few family members that were around the area. I’m so glad we did. We had such a great time for our first ever “Friendsmas”. Great food, great people, great laughs, and some incredibly great unexpected gifts!
To show their appreciation some of our dear friends bought us a new 60″ Q Smart TV for our patio! I almost fell out of my chair! Who does that? I just couldn’t believe it. My husband and I have never had someone do something like that for us. Since our house is the normal host for Sunday Funday’s they thought it would be nice this winter watching football outside by the fire on an even Larger Smart TV than what we had out there! I almost cried. I still can’t believe it. We were moved by their thoughtfulness and how much they wanted to show their appreciation for us.
Not just the extravagant gesture, but all the laughs and good times last night over some great wine really humbled my heart on how extremely wealthy we are in the friends/family category. We simply are blessed with the very best to grow with and experience this journey of life with. We went to bed with happy hearts and full bellies.
“Friendsmas” 2018 was a success! But what else was a success for me… is all this left over ham! I love ham. My boys do too. So I wanted to share one of my favorite left over holiday ham recipes. Because you like me, may have a few ziplock bags of leftover ham after this week.
My mom used to feed me this recipe when I was a kid, and when I go home for the holidays she makes me my favorite comfort food… Cream Ham on Toast! Some people refer to it as “Sh!t on a Shingle!” Lol. Some make it with ham, some use hamburger meat, some use spam! (now that for me… eww! No way, sorry peeps I draw the line there) but you get the picture. When I was growing up we didn’t have much and this meal went a long way, so we ate it often.
We put the creamy mixture over fresh hot out of the oven buttermilk biscuits, but I was out of biscuits so we went with the classic toast for lunch today before we start our Christmas Eve traditional plans.
Cream Ham on Biscuits/Toast:
3 sticks of butter or margarine
2 cups choppers cubed ham
3 cups of warm milk
1 1/2 cup of flour
Pepper to taste
(Some add a small can of peas, my grandmother would do this but my house does NOT like peas so we skip)
Chop ham into cubes. Warm milk on low heat in a small pot, keep on low to keep warm. Melt butter in separate large pot. Once the butter sticks are melted. Add flour slowly to create a paste. Keep stirring so it does not harden. Once you’ve created your gravy paste, SLOWLY add small amounts of the warm milk. Constantly stirring while slowly adding more and more until you get the gravy consistency you would like. Add pepper to season to taste. Add ham. Keep stirring on low. Always stir. Pull your busquits out of the oven or your toast out of the toaster and pour mixture over. Done! Yummy comfort food and a great way to utilize the extra ham meat from the holiday!
